Make Malawi Msamaba this Summer

Just in time for summer, here's a recipe from Malawi that you can prepare using vegetables straight from your own garden. Perhaps you're even growing your own burlap sack gardens like those created by the industrious women of Gideon village in Malawi (originally featured in the Summer 2013 edition of World Ark).

Masamba is a Malawian dish prepared with kale, spinach, collards or pumpkin leaves, peanut powder, onions and tomatoes.

Ingredients

• 1 pound greens, well-washed and finely chopped (kale, spinach, collards or pumpkin leaves)
• 4 tablespoons peanut powder
• ½ teaspoon salt
• 2 small onions finely chopped (optional)
• 4 medium tomatoes, chopped

Directions

1. Make the peanut powder by grinding roasted peanuts in a blender until fine and powdery.
2. Boil salted water and put the greens in (just enough boiling salted water to cover the greens).
3. Cook over medium heat until soft, adding water as needed to keep the greens from sticking.
4. After about a minute, add the tomatoes, onions and peanut powrder on top of the greens. Do not stir.
5. Reduce heat and simmer for 15 minutes.
6. Stir and simmer 15 additional minutes.
